Spinach & Chicken Salad
"A salad you can call a main dish."

serves: 8-10
Ingredients:
1 package (6 oz.) baby spinach
1 small package (8 oz.) bowtie pasta, cooked and cooled
1-4 tablespoons sesame seeds
1/2 cup sunflower seeds
1 can chopped water chestnuts
3 chicken breasts
generous amount of lemon pepper
dressing:
1/2 cup olive oil
1/2 cup sugar
1 teaspoon salt
1 teaspoon sesame seeds
3 tablespoons soy sauce
2 tablespoon seasoned rice vinegar
1/2 teaspoon sesame seed oil
1 teaspoon fresh garlic, crushed
Directions:
Grill chicken and season with lemon pepper. Be very generous with seasoning, to the point of what's considered 'too much'. Cut chicken into bite-size pieces. Combine with all other salad ingredients. Toss with dressing and serve.
Dressing: Stir or shake ingredients well, until sugar is dissolved. Dressing can be made ahead of time and stored in refrigerator. Let dressing warm to room temperature before tossing into salad.
