Aunt Ida's Yummy Yams
"Grandpa Fife's aunt Ida (his mother's sister) would serve this with a ham and peas."-Grandma Fife

Ingredients:
2 cans of yams
5 to 6 raw apples, peeled and cut into chunks
1 can chunk pineapple
3/4 cup sugar
4 tablespoons cornstarch
1 teaspoon salt
1/4 lb. margarine (can use less)

Directions:

  1. Drain pineapple and yams, save 1 cup yam juice and 1 cup pineapple juice. (If a little short, add enough of available juice to total 2 cups)
  2. Heat juice. Stir together sugar, salt and cornstarch and add to heated juice. Add margarine. Cook until thickened.
  3. Place mixed yams and fruit in large baking dish (buttered). Pour thickened juice mixture over yams and fruit. Bake at 350 degrees until apples are tender, about 45 minutes.
