Sweet and Sour Chicken

Ingredients

4 chicken breasts, cubed
Juice of pineapple (20 oz) + water to make 2 cups
1 cup vinegar
3 Tbsp soy sauce
¾ cup brown sugar
3 Tbsp cornstarch

Directions

Cook chicken.

Start rice before sauce (I usually use 1 1/2 cups of uncooked rice).

Sauce – Put water and pineapple juice into a large frying pan or wanton on med-med/high. Add brown sugar, vinegar, and soy sauce. When hot, put cornstarch and ½ cup cold water into a cup. Stir until smooth. Pour a spoonful of the hot sauce into the cup with cornstarch, dump into sauce. Add cold chicken chunks. When chicken is heated through, add the pineapple chunks.
