serves: 12+
Ingredients:
3 large leeks, sliced
2 zucchini (green and yellow), sliced
1/2 cup butter (1 cube)
4 large tomatoes (or 6 medium), sliced
6 cloves of garlic, mashed
1/4 cup olive oil
1 can olives
24 oz. bottled Spaghetti Sauce (Prego w/mushrooms)
2 packages mushrooms
1 lb. hamburger
2 tablespoons Montreal Steak Seasoning
Directions:
- In a frying pan, cook leeks, garlic and butter. Cook on low heat until the leeks are transparent. Caramelize leeks until brown.
- Add mushrooms until sauted. Place all in a large saucepan.
- In a frying pan, brown hamburger, season with Steak Seasoning.
- Add olives, zucchini, tomatoes, and bottled sauce to saucepan and generously season with Steak Seasoning (about 1 tablespoon). "But not if Grandma's coming, it's too much salt for her."
- Add hamburger to sauce and cook on low until it simmers, and zucchini is cooked.
- Serve over your favorite noodles, also great over spaghetti squash.
Grandpa says "It can be frozen and re-heated. It is even better the second day!"
