Parmesan Chicken

serves: 4-6
Ingredients:
4-6 boneless, skinless, chicken breasts
1 box Stove Top stuffing
1 cup Parmesan cheese
1/2 cup (1 stick) butter
Directions:
- Pound chicken breasts until thin, using flat side of tenderizer. You don't want to beat it up too bad, just until it's thin enough to see through
- melt butter in a small bowl
- Place stuffing in a large Ziploc and pound until it's broken up a bit. You don't want it ground too fine
- Dip chicken in butter, roll in stuffing and place on a cookie sheet
- Drizzle left over butter over the top of the chicken
- Bake at 350 degrees for 30 minutes. Great with fettuccine and spinach
